There’s a surplus of pumpkin in my fridge. Let’s correct that, there was a surplus of pumpkin. This recipe was sent to me and I figured cookies are something I don’t do enough of. The pumpkin was used up in these pumpkin cookies. And yes, there was cookies around the house
If you love your cookies soft and chewy, these are the cookies you should be making. The texture was just perfect. The texture alone is probably what made them so addicting.
The pumpkin cookies have this flavor that’s reminiscent of pumpkin bread. If you saw me as a kid you would have seen I ate the whole loaf of bread by myself. So I pretty much ate the whole batch of cookies too The cookie isn’t too sweet by itself, perfection.
Pumpkin cookies = one of my absolute favorite cookies.
On top of the cookies is a simple powdered sugar glaze. Not too much spread on top, just enough to add some sweetness. Plus, they look really pretty.
If you have a craving for cookies, you should for sure give these a try. There’s not to much of that pumpkin spice flavor, it’s pumpkin.

Ingredients
- 1 1/4 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 1/4 cup butter, softened
- 1/2 cup sugar
- 1/4 cup light brown sugar
- 1/2 cup pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 2 tablespoons heavy cream
- 1 tablespoon melted butter
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350F. Line a baking sheet with parchment paper.
- In a large bowl, combine flour, baking powder, baking soda, pumpkin spice, and salt.
- In another large bowl, mix butter and sugars. Combine in the pumpkin puree, egg and vanilla. Mix well.
- Slowly add in dry ingredients and mix until combined.
- Drop dough evenly onto prepared sheet and bake for 12-15 minutes.
- Combine powdered sugar, heavy cream, melted butter, and vanilla. Add sugar and/or heavy cream until consistency is achieved.
- Place cookies on top of parchment paper and drizzle with glaze. Allow glaze to set before serving.
